    What do you need to make 1 litre zucchini soup?
    – Blender
    – Stockpot or a big pan

    • 1 chopped onion
    • 2 garlic cloves, very fine chopped
    • 2 zucchini, diced in cubes
    • 1 litre of water
    • 2 vegetable stock cubes
    • 100 ml (vegan) cream or coconut milk
    • Olive oil
    • Salt and pepper, herbs if you prefer

    How to make?
    1. Heat the pan, add the olive oil. Fry the onion until it is glassy. Add the garlic. Then add the zucchini and fry for another 5 minutes.
    2. Put the water and stock cubes in the pan. Wait until it boils. Turn down the temperature and let it simmer for 20 minutes.
    3. Blend the soup until it is smooth and then stir the cream through the soup.

    4. Put the soup in a bowl.
    It is nice to eat with (homemade) croutons or bread

    What do you need for 2 persons?
    – Grater
    – Baking pan
    – Frying pan

    • 250 gram grated tempeh
    • 2 chopped onions
    • 2 garlic cloves, very fine chopped
    • 2 Romano tomatoes, diced in cubes
    • 4 tortilla wraps
    • ½ Iceberg lettuce cut in strips
    • Olive oil
    • 2 ts Ground cumin seed
    • Salt and (cayenne) pepper

    How to make?
    1. Heat the pan, add the olive oil. Fry the onion until it is glassy. Add the garlic. Then add the grated tempeh. Fry for 5 minutes
    2. Add the tomato cubes, salt, pepper and cumin. Let it simmer for 5-10 minutes until the moisture is almost out
    3. Heat the tortilla wraps in a dry baking pan until they look golden brown (you can also use the oven)

    4. Put the salsa, lettuce and maybe some sambal on the tortilla and roll it up
